Mild Pecorino Sardo

Wheels of Mild Pecorino Sardo are recognisable from their green label


They are cylindrical with flat faces (top and bottom), and have a straight or slightly convex outer edge. The rind is smooth, thin, and is either white or pale straw-coloured.

The flesh is white, soft, compact or sometimes with occasional (small) holes, and it has a sweet, aromatic flavour.

The wheels, which are aged for between 20 and 60 days, weigh approximately 2 kg.

Mature Pecorino Sardo

Wheels of Mature Pecorino Sardo are recognisable from their blue label.

They are cylindrical with flat faces (top and bottom), and have a straight outer edge. The rind is smooth, firm, and the wheels that have been aged for longer are brown in colour.

The flesh is white, becoming straw-coloured as the ageing progresses, compact or sometimes with occasional (small) holes, it is strong and pleasantly tangy on the palate.
The wheels, which are aged for at least 2 months, weigh approximately 3kg, but can reach as much as 4kg
